721 is Baldo Baldinini's signature red vermouth that is built on the refined notes of Damask Rose. Salvatore Castiglione draws on the refined profiles of the rose with a cocktail that combines the elegance of 721 with the depth of Rum. Believe was proposed at Identità Golose 2022 as a cocktail pairing to Federico Sisti's dishes.

Ingredients

• 3 cl Vermouth Rosso 721
• 3 cl Cacao Rum Copalli
• 3 cl Calvados Fine

GARNISH

• Soft Rose Meringue and Black Lime from Oman
• Rose Petals
721

Execution

The cocktail is made from a mixing glass with ice, in which we combine 3 cl of 721 with Copalli's Cacao Rum and Calvados Fine. Once mixed, we pour the cocktail into a chilled glass and complete the garnish with rose petals or a rosebud, soft rose meringue and the Omani Black Lime in amounts according to one's taste, to complete the flavor profile of the cocktail.
