The Botanicals
Aromatic perfection comes from the art of selection.

The Botanicals: The Heart of DIBALDO Spirits
Botanicals are the indispensable foundation of all DIBALDO creations. Their careful and meticulous selection is essential to ensure the quality and uniqueness of each creation.
But what exactly do we mean by “botanicals”?
In the context of liquor making and distilling, botanicals are plants that can be used to extract flavors and fragrances. Although the number of plants that can be used in this context is limited, each botanical brings with it a multiplicity of nuances, influenced by the place of cultivation, vintage, and extraction technique.

Botanicals according to Baldo: a journey to perfection
The study and research of botanicals is a passion that has fascinated and involved Baldo since his adolescence in an all-encompassing way. Every morning at dawn, Baldo begins his day immersed in the study of the samplings of spices and herbs that arrive from the best suppliers around the world. It is in these early hours of the day, full of creative energy and inspiration, that the analysis of new botanicals takes place-a work that constitutes the beating heart of our production.

The complexity of Botanicals: a world of possible combinations
Herbs and spices are plant products that, by their nature, are subject to variables such as climate and origin. Each botanical can have unique characteristics depending on the year it was harvested and where it was grown: a Cinnamon from one country may have completely different characteristics than another from a different origin.
Then there is the method of aroma extraction that plays a crucial role. The same raw material can be processed in various ways: distilled, macerated, infused, to obtain essential oils, aromatic waters, mother tinctures, medicinal tinctures, alcoholates, and more.
This opens the door to endless creative possibilities, effectively turning each botanical into a resource with hundreds of variations.

From simplicity to structure: the transformation of Botanicals
Take a Bitter Orange as an example: the choice of variety, vintage, provenance, and the part of the plant to be used (flowers, fruit, fresh or dried peel) determines a wide range of options. Once the extraction method is chosen, countless processing possibilities open up, each aimed at achieving a unique flavor profile.
This ability to combine raw materials and processes in different ways is the secret that transforms a few hundred botanicals into tens of thousands of different products, all collected in Baldo's Olfattorio. Each bottle holds a story, a nuance that is the result of careful and rigorous processing.

Global research: boundless perfection
DIBALDO's first goal is the search for absolute quality, which is why the botanicals selected by Baldo come from every corner of the world. If a valuable botanical can be found thousands of miles away, we are ready to travel that path, without geographical limitations.
Our philosophy is always based on using the best botanicals for the result we seek, regardless of where they come from.

The artistic synthesis: a work of passion and precision
This explains why Baldo's mastery is not only in the choice of botanicals, but also in the way they are used. A thorough knowledge of the raw materials, combined with the ability to master the various forms of processing, is what allows extraordinary creations to come to life. Each botanical is treated with the utmost respect and care, to extract the purest and most intense soul possible.

Wine selection: a natural starting point
For DIBALDO, wine represents the blank canvas on which most creations come to life, which is why wine selection is careful and scrupulous. Each bottle is the result of research aimed at achieving the perfect fusion of aromas, fragrances and organoleptic qualities. The choice of wines to be used as a base for liqueurs follows principles of naturalness, excluding chemical additives, preservatives and added yeasts.
Each wine is selected for its purity and ability to inspire creativity and sensations, without compromising on quality. A philosophy that is also reflected in the production processes, which do not involve the use of artificial coloring and burnt sugars. We always aim for natural and respectful processing methods.
Getting to a great Bitter, or Vermouth, requires patience first of all.Because there are no rigid formulas, so much as the need to fully understand how the spices interact and harmonize with the wine. This is how one learns to master a slow process, with one awareness accompanying each step: time itself is the greatest ally of every creation.
